D.B. Kenney Fisheries is proud to represent one of Nova Scotia's finest smokehouses, Ocean Organic. Using only fresh, locally caught Salmon, Haddock, Cod, Pollock, Mackerel, Herring and Scallops, they create a superior taste treat every time. Fruit and Oak wood is used in a traditional smoking process to enhance the flavor of Atlantic fish.
The smoking kiln can hold up to 450 kilos of salmon sides. The kiln holds 4 upright racks with 20-25 trays per rack. The smoking process takes 12-16 hours; this is dependent on the temperature and humidity control. We use a 'natural' smoke from a blend of oak and fruitwood. All the fish we process arrives fresh daily from one of the many salmon farms within the region.
All of the equipment in our facilities is approved, food grade quality, stainless steel and the walls are covered with food grade industrial plastic. Ocean Organic's smokehouse facilities are set up in 3 discreet sanitary zones to meet with government approval. Personnel dress in plant provided clothing, which is sanitized on a daily basis, along with all our equipment.
Our plant registration, and strict adherence to the changing codes, enables us to be full participants in the Quality Manufacturing Practice (QMP) guidelines that have been implemented by the Department of Fisheries Inspection Branch. These regulations meet the strictest standards of the United States FDA as well as those of the importing countries in Europe.
We have a full 14-18 working stations in the plant which enables us to fillet, steak, smoke, trim, slice and vacuum pack a finished product in a manner that is defined by the customer. With our current capacity, we are capable of producing 700-1000 pounds of finished product in a single day. Our cold storage facility has the capacity to store up to 10 tons of finished product.
We know that product presentation is important, so all of our packaging is aesthetically designed to show off the quality of our smoked seafood. Another important aspect of product appearance is its compliance with all importing countries. After much research, this issue has been successfully dealt with. At present, we print all our vacuum packaging in 5 languages.
